4:00PM - 5:30PM  Learn, Taste, explore

Guests are invited to join the farm tour led by host Paul Alward, try their hand at archery guided by national champions the Sauer Family, and learn from each featured chef how to prepare a component of the evenings’ dish over open fire.

Demos & Dishes: Chefs Woldy Reyes, Caroline Schiff, Allison Kave, Bill Clark and Kevin Thai bring their distinct palettes to the cookout with a burst of seasonings and spices from their kitchens to highlight the diversity of New York’s upstate farming community. Dishes and demos may include:

  • Filipino-Style Grilled Banana Leaf Fish with Smoked Tomato-Red Onion Salad + Fish Sauce

  • Hands-on Goat Kebab "shaping" with Za'atar Flatbread Grilling

  • Pork Belly Summer Roll with Charred Scallion + Ginger Dipping Sauce

  • Whole Roasted Seasonal Vegetables + Grilled Greens atop Local Grains

  • Dutch Oven "Fired" Semolina Cake with Smoked White Chocolate and Charred Stone Fruit

Each chef’s demo is approximately 20 minutes and is part of the cook for that evening's supper, so guests will have an opportunity to watch the whole process from fire to fork! 

And what cookout would be complete without a cocktail competition with a special bonfire giveaway!

5:30 - 6:45PM Fireside communal supper

7:00PM Event ends as the sun sets
